A ganache filling expresses a mildly sweet flavor and decadent soft texture within the center of a delicate chocolate shell. Over the years, mass-market consumer chocolate companies have replaced cream with cheaper oils and more sugar to extend shelf-life suitable for department stores and other retailers.
